Eggo Stratta

For this you'll need:

Spicy Italian sausage meat about 1 lb I think.
1 loaf crusty bread (fresh is best!)
Sun dried tomatoes (or not)
Grated cheeses (I suggest mozza, cheddar, or parmesean)
7-8 eggs
Milk
spices

Take the sausage me and crumble it into a frying pan. Fry the little crumbles until browned and add in the tomatoes (and whatever else you want in it, green pepper and onion is nice) along with some salt and pepper.

In a deep oven safe pan/pot/whatever place slices of the break in a single layer. Cover this layer in sausage crumble mix, then a layer of cheese... bread...meat... cheese etc. I usually do 2-3 sets of layers, always finishing with cheese.

Beat all the eggs well and add some milk to them and beat them some more. Use a hand mixer if you have it. Add more spices here if you want. If you haven't tried oregano in eggs do it now. Awesome.

Pour this egg mixture over the layers you created until you reach the top. Any egg left over? Fry it up!

Heat oven to 350 and cook for about 20 minutes. Watch for the top becoming golden brown.
