Ginger Banana Bread

2 and 1/2 cup flour
1 to 2 cups of white sugar (substitute 1 cup of brown sugar with white sugar if desired)
3 and 1/2 tsp baking powder
1 tsp salt
3 and 1/2 tbsp vegetable oil
1 egg, 1 and 1/4 cup of milk
1 and 1/2 tbsp of ground cinnimon
2-3 1/2 tbsp ground ginger
1/2 to 1 tsp of nutmeg
3 to 4 large mashed bananas

I'd suggest letting your bananas ripen as much as possible to ease mashing. Preheat the oven to 350. Mix flour, sugar, baking powder, salt, and oil in one bowl. Do not sift dry ingrediants together. Add milk and egg, mix until there are no lumps. Add bananas and spices, and whisk the mixture until a medium to medium-dark tan color. Taste-test. It should have a slight gingery spiciness to it.

Bake for 65 to 70 minutes. Be careful to adjust for your elevation.

Slather with butter or honey right out of the oven to keep it moist. Goes great with coffee and as a holiday treat, plus it makes the house smell good.
